A love letter to my late mom
and Black bean and salmon (optional) tacos with avocado cream sauce
I don’t often talk about my spirituality freely because in the past, it was mostly mocked or dismissed by those I love. That does not matter any more. Additionally, in my line of work it was not how one makes decisions nor would it be welcomed into the equation. Again, now is not the time to wonder if this makes sense. At the core of spirituality is love and I don’t see how that is wrong. I have decided during this week of love to share how spirituality came to be front and center in my life–a love letter to my late mother. Happy Valentine’s Day.
My mom passed away in the summer of 2016. She was diagnosed in December, and energy by August. Whiplash. That fall, I had a trip planned to Sedona, AZ. One of my girlfriends travelling with me was very intuitive and spoke freely and comfortably on the topic. I always had spiritual tendencies but had never had a reading or gone to see a medium. It was on this trip I decided to book a session when I returned to New England. This same friend had a wonderful recommendation and when I went online to schedule, the only date available was December 3rd, my mother’s birthday! At that moment I knew my mother would be by my side. Same as always.
The Reading
It was at this reading my mother and mother-in-law came through immediately and the medium shared things that only they would have known. It was overwhelming and beautiful. They were watching over my daughter who was traveling at the time. It was in this session where I learned about my angels, we all have them, our guides, a team of people, and loved ones who have passed. All were helping me, they saw the world and how it was going and shared perspective. It was as if blinders were removed, the brightest light showing the way. I have always been loving and free but I could feel that joy, peace and freedom were my focus and my future. A little over a year later, I visited again. This time, in addition to my guides, kind and wise philosophers came through and the medium channeled their message for me; it was not a “normal” reading, and the medium acknowledged that the sessions were happening more often like this now. It struck me. For the last seven years it has felt prophetic. I thought the words were wonderful and powerful that day and I still do. Time to share them here.
The following is part of the transcribed channeling:
[the medium explained: new man talking now–not a loved one or an angel–she sensed that it's a philosopher/wise teacher, very intelligent, unassuming, gentle and kind, from ancient times–he is showing her the earth/sphere but it has holes in it–it was an armillary sphere, a symbolic representation of the heavens or knowledge] Everyone is in the same boat, small ones and the big ones. A big shift is happening globally and you awakened ones are in the crossfires. Don’t lose your strength, your center. A lot of you are losing your centers and getting knocked over by the energies and they’re coming through as people in front of you and other parts of the country and world. Your feelings of powerlessness fuel your imbalance.
It's all about being the stillness in the center of the mountain. Storms go by, wind, but nothing affects the core of the mountain. That's what you’re being called to be amidst the chaos. It's only going to get worse (the medium explains: and they are not trying to scare us. That isn’t helpful, they are trying to help to remind you of the power within). This moment when you feel so powerless, you’ve never had more power at your disposal. But you have to be centered and clear. Command to the universe and hold those around you accountable for their choosing to add to the chaos. It's important that you don’t add to the chaos. And…you don’t try to, it's your feelings of responsibility that throw you into it. If you can, stay steady and strong and remember what's true and important and what's not while holding those around you accountable.
It's not a time to compromise, to give in, to be nice. Always be kind but don’t have to be pleasing all those around you. That's what they want, they want you to fix it. And you, globally, light-workers have always been able to fix things. You can’t do that right now. The things falling apart need to fall apart, it's part of how they will be fixed. Just like fires, clean everything out for new fertile ground. Systems are burning down. Systems that never worked except for a few.
You’re powerful. You’re a powerful one. You are one of the bringers of light. Don’t let the darkness swirling around contribute to you losing your vision. Stay focused on what’s important, the children, the stability of the systems in your building…
For me, the words resonated back then and now we are swimming in the chaos in the US and across the globe. I don’t expect any one person to save us. We the people are powerful within. We must be the core of the mountain. Remember what is true and important and hold those around us accountable.
For those of you who may want to explore having a reading, Jackie Eaton does her healing readings over the phone since Covid; it doesn’t matter where you live. Each call is specific to the individual’s needs at that moment. She offers sessions in person but the dates are limited so check out her website for more information. You will not be disappointed. In fact, you will wish you met her years ago. Thank you, Jackie!

Black bean and salmon tacos with pickled onion, cabbage, and avocado cream sauce
Eating well for our bodies is important. Listening to our bodies and fueling up with lean protein and nutrient rich diverse foods gives our immune system the boost needed to stay healthy throughout the winter months. Additionally, the magnesium in beans can help us balance, easing the anxiety of the day like a deep breath in food form. The soluble fiber in black beans acts similar to a clean up crew for hormones helping our body process and remove what is no longer needed. So let’s dig in.
I made salmon the other night and while these tacos were delicious without the salmon (my husband said so-he is allergic to fish) my body wanted the additional protein. Taking the extra 10 minutes to prepare and pickle the red onions gave it the zing needed to cut through the healthy fat. The cabbage provides the crunch and the avocado cream made with greek yogurt keeps the family from fighting over the last avocado—plenty of sauce for everyone.
I made my black beans at the beginning of the week so I had them on hand. If you are opening a can of beans, heat them up and add 2 tsps chili powder, 1 tsp ground cumin, 1/2 tsp oregano, or to taste. I always end up adding more cumin, I love it. A quick recipe to pickle your onions is at Katieflour.com. You will need 1 red onion, 1 lime, salt and pep and a jar with a lid.
Avocado Cream ingredients:
1 ripe avocado
1/2 C Greek yogurt
1/4 C packed cilantro leaves and tender stems
1 big juicy lime or 2 smaller limes ~ 2 Tbsp
S & P
In a food processor add ripe avocado, Greek yogurt. cilantro, lime juice, salt and pep. Whip up until smooth. Serve alongside all of your fixin’s on soft corn tortillas. We have a gas stove so I place the corn tortillas right on a low flame for a couple of seconds until each side warms up and gets a few burn marks. Alternatively, you can place about 6-10 tortillas in a damp towel in the microwave for ~20 seconds.
I cut a tomato, thinly sliced cabbage, opened the jar of salsa, shredded cheese and sour cream. This way everyone has choices. Every time is different. Use up what is in your fridge. That is why taco night is a very friendly dinner.
Enjoy and remember to Start with Beans!

I have healed my own GI issues through choices with food. I followed Karen Hurd’s bean protocol diet, I meditated and still do and I healed. I feel compelled to be in service and educate others as the more people eating beans, alongside a healthy diet and sharing their stories the more people will live a healthier existence.
